A North African staple dish, couscous is made by rolling moistened semolina wheat in more finely ground wheat flour, until it separates into pellets. Traditionally steamed and served under stew, couscous contains 112 calories per 100g. It has little fat and no cholesterol, and is rich in Vitamin A, as well as a source of potassium.
